Truffles: nutritional values, calories and vitamins in edible mushrooms

These nutrients and vitamins are found in truffles

Just a few centimetres below the surface, the fruiting bodies of the truffle form, entering into a symbiotic relationship with the tree beneath which it grows. The genus truffle or Tuber comprises several dozen different species, two of which are particularly important: the black truffle and the white truffle. The black truffle is also called the Périgord truffle because there is a long tradition of its cultivation in the region of southern France of the same name. The white truffle acquired its name in a similar way. This is also referred to as Piedmont or Alba Truffle, coming mainly from northern Italy.

Truffles are both a delicacy and nutritionally beneficial. They consist largely of water, but also contain valuable macro- and micronutrients. With around 30 to 35 calories per 100 g, truffles are extremely low in calories. Their protein content is remarkably high for a mushroom – around 5 to 7 g per 100 g – making them an interesting addition to a protein-conscious diet. They contain hardly any fat, however. They also contain important vitamins such as B1, B2 and B3, which support energy metabolism and are important for nerve function and skin health. It also contains small amounts of vitamin D, which is particularly beneficial during months with little sunshine. In terms of minerals, truffles are rich in potassium, iron and magnesium. All these nutrients make this edible mushroom valuable in terms of taste and health – provided it is enjoyed fresh and in its natural form.

Truffles are so healthy

Truffles have a wide range of health benefits. Their natural antioxidants protect cells from oxidative stress, which can slow down the ageing process and reduce the risk of certain diseases. The bioactive compounds contained in the product have a positive effect on the balance of the intestinal flora and thus support digestion. There is also evidence that truffles can inhibit certain enzymes involved in inflammatory reactions. Due to their low glycaemic index, they have little effect on blood sugar levels, which also makes them appealing for people with insulin sensitivity. Truffles thus provide subtle but effective stimuli for physical well-being.

Fresh truffles should always be stored in the refrigerator, wrapped in kitchen paper. While truffles, with their valuable nutrients, only stay fresh for two days in a standard refrigerator compartment, they can be kept for up to seven days in the EasyFresh safe of a Liebherr refrigerator.
