
Freezing and defrosting sushi – enjoy fresh at any time

Freezing sushi

The microorganisms temporarily stop multiplying in the freezer, but they are not killed off. It is therefore important that the sushi has already been stored safely and in a cool place.

The origin of the sushi does not determine its shelf life. You can freeze homemade sushi just as easily as sushi purchased from a supermarket or restaurant. What is important is that you assess how well the cold chain has been maintained.
To freeze the sushi, pack it in airtight containers, portion it as required and put it in the freezer. You can freeze pieces or sushi rolls.

Defrosting sushi

The defrosting time depends on the size of the pieces, but it will be at least a few hours. The easiest way to defrost sushi is overnight. So you can enjoy it safely at lunchtime the next day.
If you are pressed for time, you can also use the microwave to defrost sushi. Use the defrost function to prevent the raw fish or other fresh ingredients from cooking in the microwave. The sushi should be eaten as soon as possible, as microorganisms can multiply better at warmer temperatures.
