
Shelf life of a doner kebab
A doner kebab is a tasty option if you’re on the go or just need a quick bite to eat. But what should you do if it’s too big to eat all in one go? Storing a doner kebab correctly

The doner kebab, as we know it, was invented in Berlin in the 1970s and is different to the Turkish version.
A kebab contains a few ingredients that prevent it from being stored for a long time. In particular sauces containing eggs or milk will spoil quickly. That’s why you should eat your kebab no later than the following day. If the kebab has been stored for too long at room temperature, you should no longer eat it. It may already have started to go off.
Place the kebab in the fridge as soon as you can. It should be packed in an airtight container. Separate the different ingredients like the salad, sauce, meat and bread. Among other things, this will prevent the bread getting soggy from the sauce.
We do not recommend freezing the kebab. When it’s defrosted, it will become mushy and the taste may also be heavily impacted.
Heating up a doner kebab
The quickest option is to heat up the whole kebab in the oven or microwave. At 100 °C, the kebab will be ready to eat after around ten minutes. However, any cold ingredients, such as the salad, will be heated in the process. The kebab also won’t crisp up in the microwave.
The alternative is slightly more complicated, but it’s worth it to get a much better taste. If you previously separated the ingredients when you stored them, you’ll now also save yourself some work.
Place the bread in the oven at 100 °C for five to ten minutes. Turn it over halfway through and take it out of the oven once it is warm and crispy. Meanwhile, you can fry off the meat with a little oil in a frying pan.
Once both the meat and the bread have been warmed up, you can assemble the kebab just like in a kebab shop. What’s more, you can even add fresh vegetables or a different sauce to spice things up.
