Barbecuing fruit – what you need to know

As a basic rule, you can use any type of fruit for dessert on the barbecue. Nevertheless, the firmer the fruit, the better. If the fruit’s flesh is too soft, it can fall through the grate. You can skewer small pieces of fruit on wooden skewers or reusable metal sticks. However, wooden skewers should be soaked in water beforehand to prevent them from catching fire. To prevent the fruit from becoming too mushy, all types of fruit should only be left on the barbecue for ten to fifteen minutes. Unlike steaks and sausages, fruit should not be placed on the hottest part of the barbecue, but cooked over a medium heat. With a charcoal grill, it should be no problem to use the residual heat from the coals after preparing the main course to barbecue dessert.

Dessert on the barbecue – this fruit is a real eye-catcher

Pears:pears can be halved and cooked on the barbecue as a dessert; tinned pears are particularly suitable. They can be served with a ricotta cream flavoured with a little cinnamon and honey and topped with grated chocolate.

Stone fruits: nectarines, peaches and apricots can be halved, pitted and placed directly on the barbecue with the cut side down. Serve with vanilla ice cream topped with fresh mint, a little basil or caramelised nuts.

Berries: these are best used in baking dishes for desserts such as berry crumbles, as their flesh is quite soft and the fruits themselves are very small.

Bananas: bananas can simply be placed on the barbecue with their skins on. During the cooking time, the banana peel turns deep black. However, the inside becomes soft and even sweeter. Shortly before the end of the cooking time, you can cut open the banana, fill it with a chocolate bar and allow it to melt briefly.

Pineapple: pineapple is also a straightforward dessert to make on the barbecue if it is cut into thin strips or rings. Served with fresh yoghurt, a little mint and pistachio nuts, it creates the perfect highlight.

Dessert on the barbecue with soufflés or muffins

Muffins and soufflés can also be cooked on the barbecue if you have small baking dishes available. For eight small moulds, boil 300 ml of milk with two tablespoons of flour. Stir continuously until the mixture thickens. Then remove the mixture from the heat and stir in two egg yolks. Then all you have to do is beat four egg whites with four tablespoons of sugar until stiff and fold into the mixture. Grease your moulds with a little butter and sprinkle with some sugar.
