Externally, savoy cabbage impresses with its light to dark green, wavy leaves.

Although savoy cabbage is not as firm as its relatives white or red cabbage, it is still characterised by its crunchy texture. A typical characteristic of savoy cabbage is its spicy yet mild taste. Savoy cabbage is also impressive in terms of nutritional values: 100 grams contain enough vitamin C and folic acid to cover an adult’s daily needs – and have just 26 kilocalories. Compared to red cabbage, it contains twice as much protein, fat, iron and phosphorus. We are convinced: savoy cabbage is healthy.

Our tip: like other types of cabbage, savoy cabbage can have a bloating effect. To avoid this, it’s advisable to season the cabbage with anise, fennel or caraway.

Storing savoy cabbage: for the right effect and longer-lasting freshness

Also known as Welsh cabbage or Welsh kale, savoy cabbage is available all year round. Since early savoy cabbage has a particularly tender and mild flavour, it is ideal in the form of cabbage rolls or steamed as a vegetable side dish served with meat or fish dishes. Savoy cabbage also tastes delicious raw, for example in a salad. Combined with other fresh ingredients, it also looks great thanks to its curly shape. That’s why the outer leaves are often used for decoration or as a receptacle for holding dips.

When you buy savoy cabbage, make sure it is fresh for optimum nutritional values. You can recognise this by the easily breakable leaves. Alternatively, try the ‘shake test’: if the Savoy cabbage rattles, it is fresh. If you do not use the cabbage immediately after purchase, it is best to store it in a cool place.
